Oriental Chicken Nuggets & Rice

Oriental Chicken Nuggets & Rice

3/4 cup uncooked rice
1 1/2 cups canned reduced-sodium chicken broth
12 ounces boneless skineless chicken breast,
cut into 1 1/2-inch cubes
1 1/2 tablespoons hoisin sauce
1/2 cup cornflake crumbs
Nonstick garlic-flavored cooking spray
1/4 cup bottled sweet and sour sauce

Preheat oven to 450 degrees Fahrenheit.

Combine rice and chicken broth in medium saucepan.  Bring to a boil over high heat.  Reduce heat to low; cover and simmer 14 minutes or until most of liquid is absorbed; let stand covered 5 minutes.

Toss chicken with hoisin sauce in medium bowl.   Roll each nugget in cornflake crumbs; transfer to nonstick jelly roll pan.   Coat nuggets with cooking spray.  Bake 10 to 12 minutes or until chickenis no longer pink in center.  Serve nuggets over rice with sweet and sour sauce.   Makes 4 servings.  (Diabetic Cooking)

Roasted Garlic Spread with Three Cheeses

2 medium heads garlic
2 packages (8 ounces each) fat-free cream cheese, softened
1 package (3 1/2 ounces) goat cheese
2 tablespoons (1 ounce) crumbled blue cheese
1 teaspoon dried thyme leaves

Preheat oven to 400 degrees Fahrenheit.   Cut tops off garlic heads to expose tops of cloves.  Place garlic in small baking pan; bake 45 minutes or until garlic is very tender.  Remove from pan; cool completely.  Squeeze garlic into small bowl; mash.

Beat cream cheese and goat cheese in small bowl until smooth; stir in blue cheese, garlic and thyme.  Cover; refrigerate 3 hours or overnight.  Spoon dip into serving bowl; serve with cucumbers, radishes, carrots, and yellow bell peppers and garnish, if desired.  Makes 21 servings.  (Diabetic Cooking)

Super Nachos

12 large baked low-fat tortilla chips (about 1 1/2 ounces)
1/2 cup (2 ounces) shredded reduced-fat Cheddar cheese
1/4 cup fat-free refried beans
2 tablespoons chunky salsa

Arrange chips in single layer on large microwavable plate.  Sprinkle cheese evenly over chips.

Spoon teaspoonfuls of beans over chips; top with 1/2 teaspoonfuls of salsa.

Microwave at MEDIUM (50%) 1 1/2 minutes; rotate dish.  Microwave 1 to 1 1/2 minutes or until cheese is melted.  Makes 2 servings.  (Diabetic Cooking)

Sweet Potato and Apple Casserole

3 medium sweet potatoes
3 medium apples
1/4 cup sugar
1 tablespoon grated orange peel
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1/4 cup orange juice

Microwave sweet potatoes on HIGH 8 minutes.   Peel and cut into 1/2-inch slices.  Peel apples and slice crosswise into 1/2-inch rings; remove seeds.  Combine sugar, orange peel, nutmeg and salt in small bowl.  Alternate slices of sweet potatoes and apples in deep 1 1/2 quart casserole.   Sprinkle sugar mixture over each layer.  Add orange juice and cover.   Microwave on HIGH 6 minutes.  Makes 6 servings.  (Diabetic Cooking)

CARBOHYDRATE:  33 grams per serving

 

Wild Wedges

2 (8-inch) fat-free flour tortillas
Nonstick cooking spray
1/3 cup shredded reduced-fat Cheddar cheese
1/3 cup chopped cooked chicken or turkey
1 green onion, thinly sliced (about 1/4 cup)
2 tablespoons mild, thick and chunky salsa

Heat large nonstick skillet over medium heat until hot.

Spray one side of one flour tortilla with nonstick cooking spray; place sprayed side down in skillet.  Top with cheese, chicken, green onion and salsa.  Place remaining tortilla over mixture; spray with nonstick cooking spray.

Cook 2 to 3 minutes per side or until golden brown and cheese is melted.  Cut into 8 triangles.  Makes 4 servings.  (Diabetic Cooking)
